Vinaigrette is a salad bistro that raises the “salad bar” with delicious entrée salads. With locations in Santa Fe, Albuquerque, and now Austin, the perfectly dressed gourmet salads boast innovative flavor combinations from the savory All Kale Cesar to the sweet Nutty Pear-fessor and balanced Salacho taco salad. It’s comfort food that is decidedly nutritious to make you thrive.

Much of the produce for Santa Fe and Albuquerque is grown on owner Erin Wade’s 10-acre farm in Nambe, New Mexico.  A farm in Bastrop, TX will support the Austin restaurant. Sustainability is a top priority. Food waste from the restaurant returns to the farm to feed the animals, and also gets composted back to the land to feed the healthy soil.  
 
A variety of delicious soups and sides, hearty sandwiches and house-made desserts complement the salad-centric menu offerings along with a variety of dinner specialties and seasonal fare.

Uniquely, Vinaigrette is a restaurant you can enjoy eating at every day and feel healthier and happier for it.

Clean. Modern. Sleek. Those are the first thoughts that entered my head as I walked into Vinaigrette. The patio was a pleasant suprise considering it is pet friendly, had plenty of seating, a secluded outdoor vibe, along with the shade of an enormous oak tree which really helps on a hot summer day. The first plate to be served was the black bean and kale nachos topped with an avocado and cilantro dressing. I was hesitant to try these as I'm not a fan of black beans but the way the textures and flavors came together was perfect! The sweet dressing complimented the bitterness of the kale very well and left my friends and I anxious to see if our main entrees would be as well prepared. Not long after the appetizer came my salad, which was 'The Omega'. Upon first inspection I wasn't sure if I would even be able to finish this monster of a salad. What really surprised me was how evenly distributed the salad was. The dressing was perfect throughout the entire bowl, there wasn't a pile of corn, avacado, and peppers at the bottom, rather every bite was a combination of all ingredients. Speaking of the ingredients, it is rare to taste such fresh produce, which isn't a suprise considering Vinaigrette's ingredients are grown on a farm in Bastrop. At the end of my meal I felt full, refreshed, and very much satisfied. If you're in Austin and looking for a healthy, delicious spot to eat Vinnaigrette may be the perfect match.

La Pepita
Chopped green kale with shredded chicken, black beans, crumbled cotija, diced avocado with spicy crispy pepitas and a lemon-cumin citronette.

Asian Chopped Salad
Chopped Napa & red cabbage and rice noodles, with julienned red bell peppers, scallions, shredded carrots, cilantro and peanuts. Tossed with a miso ginger vinaigrette and topped with crispy noodles.

The Omega
Leafy greens and kale chopped and tossed with sweet corn, diced bell pepper, tomato, avocado, red onion, cilantro and toasted pine nuts. Dressed with blue cheese vinaigrette.
